Coffee Molasses ‘Barbecued‘ Brisket

1 1/2 lb beef brisket, trimmed

2 tbsp chili powder

1 tsp salt

3/4 tsp freshly ground black pepper

1/2 tsp garlic powder

1 tbsp canola oil

2 yellow onions, thinly sliced

1 cup ketchup

1/2 cup bottled chili sauce

1/4 cup molasses

2 tbsp strong brewed coffee

1/2 tsp hot pepper sauce

Recipe For Barbecue

Spray the oven broiler rack with nonstick cooking spray and preheat broiler.

Use Your Crockpot or Slow Cooker for Veggie Rump Roast or Coffee Molasses Barbecued Brisket

In a cup mix together the chili powder, salt, pepper, and garlic powder. Rub this spice composition onto the brisket and place on broiler. Drizzle 1 teaspoon of the canola oil over the top of the brisket. Broil 5-inches from the heat until browned. This should take about 5 minutes per side.

While brisket broils, heat the remaining canola oil in a large nonstick skillet over medium heat. Add the onion slices and cook, stirring often, just until they start to turn golden, about 8 minutes. Stir in the ketchup, chili sauce, molasses, coffee, and hot pepper sauce.

Spread half of the ketchup composition over the lowest of the crockpot or slow cooker. Place the browned brisket over the ketchup composition and top with the remaining mixture. Place the cover and the slow cooker and cook on low until tender, roughly 8 to 9 hours.

Remove the brisket from the cooker to a cutting board. Skim the fat off of the sauce in cooker. Slice the brisket across the grain and serve with the defatted sauce.

Note: This makes great brisket sandwiches.

Veggie Topped Rump Roast

2 tbsp all-purpose flour

1/2 tsp salt

1/4 tsp paprika

dash of pepper

1 (2-lb) boneless beef rump roast

2 tbsp canola oil

12 small potatoes

6 medium carrots, sliced

2 medium onions, sliced

1 green bell pepper, large diced

1 can (10.5-oz) vegetable beef soup

1/4 cup water

1 bay leaf

1/3 cup cold water

3 tbsp all-purpose flour

Combine the 2 tablespoons of flour, salt, paprika, and pepper; coat the meat with the mixture. In a heavy skillet, heat the canola oil and brown the roast in the oil. Brown on all sides.

Put the potatoes, carrots, onions, and bell pepper into the cooker. Place the browned roast over the vegetables. Join the soup with the 1/4 cup of water and the bay leaf. Pour composition over the roast. Place the lid on the cooker and cook on low setting 10 to 12 hours.

To serve, take off the bay leaf. Dispose the meat in the center of a large serving platter and Dispose the vegetables around the meat. To make a thicker gravy, if desired, blend the cold water into the flour in a saucepan and add the liquid from the cooker. Cook, stirring, until thickened and bubbly. Serve over or with the meat.

Simmer all for 10 minutes. Add in the parsley and lemon slices. Continue to simmer for 5 to 7 minutes.

Serve chili over white rice and/or French bread.

1 green pepper, 6 to 8 large onions, 1 pound ground beef, 1 medium can of tomatoes, 1 can of kidney beans, 1 can of spaghetti sauce.

In a skillet, cook the ground beef until brown; drain.

Dice up the green peppers and onions and add to a saucepan. Add in the cooked beef and the tomatoes. Let simmer until all ingredients are well done. Add in the beans and spaghetti sauce; heat thoroughly.

Season to taste with salt, pepper and sugar.

This Cincinnati version is known as the sweet chili and is served over spaghetti noodles. The picante sauce adds a nice twist to this favorite dish.

2 pounds of ground beef or pork, 2 large onions, chopped, 2 cloves of garlic, minced, 1 (15 oz.) can tomato sauce, 1 can picante sauce, 2 tablespoons chili powder, 1 to1-1/2 teaspoon cinnamon, 1 teaspoon ground cumin, 1 teaspoon salt, 1/4 teaspoon ground allspice, 2 bay leaves, 1 pound thin spaghetti, cooked.

Topping: Shredded cheddar cheese, 1 chopped onion, kidney beans, heated, Oyster crackers.

In a large Dutch oven or pot, brown the beef or pork along with the onion and garlic. Add in the remaining ingredients, except for the spaghetti and the toppings. Cover and let simmer for 1 hour; stirring occasionally.

Remove the bay leaves. Serve the chili nice and hot over the cooked spaghetti. Use toppings as desired.
